Mitai Recipe

There’s a huge debate on the name of these cuties. I know them as Mitai and so we shall call them just that round here.

These addictive little sweet diamonds are some of the most delicious snacks from the Coast of Kenya. They’re probably known all across East Africa too. Fantastic to have with your evening cup of tea or coffee,a snack and  as a sweet breakfast dish too! It is reminiscent of mandazis, just that these have been dunked in sugar syrup  instead of having it inside the dough.

The recipe is a combination of several  recipes, with my own adjustments to make an amazing .

INGREDIENTS

  • All purpose flour
  • Instant yeast
  • Baking powder
  • Salt
  • Cardamon powder (you can use cinnamon powder or nutmeg)
  • Egg
  • Coconut milk
  • Margarine

SUGAR SYRUP INGREDIENTS

  • Sugar
  • Cardamon powder
  • Water
  • Vanilla extract

METHOD

  • In a bowl add the dry ingredients and mix together.Add in margarine and mix until you get crumbs,add the coconut milk in batches as you knead the dough.

 

 

  • Knead the dough until smooth and elastic.Set the dough aside and let it rest for an hour.

  • Divide the dough into four equal parts and flatten the balls  out individually.Cut into strips,then into diamond shapes.

  • In a pan heat oil ,fry the mitais until golden brown on both sides.

TO PREPARE THE SUGAR SYRUP :

  • In a sauce pan add sugar,water,cardamon and stir until everything is dissolved,simmer.Add the mitai to the syrup and toss until all are covered with the syrup.While on heat until it becomes dry and powdery.
