These masala chips are made with crispy fried potatoes tossed with onion and tomato masala sauce. It is a delicious appetizer that takes just a few minutes to prepare. It is prepared with easy to get pantry-friendly ingredients and faster .These fries/chips are a speciality in most parts of Kenya. The recipe takes your normal average plate of fries to a whole other level. Saucy and spicy, these masala chips work well.
What is Masala Chips?
Masala chips are one of the most delicious comfort food that is easy to fall in love with.It is a must try party snacks for takeaway nights or busy weeknight dinners.
We usually make with ready made chips for this recipe. Simply deep-fried, air fry, or bake them into golden perfection. You can also try out with fresh potatoes if you love to make the chips from scratch.
INGREDIENTS
- Potatoes
- Tomatoes
- Onions
- Tomato paste
- Cilantro or coriander (to garnish)
- Oil
- Salt and black pepper to taste
- Chilli powder
METHOD
Fry the chips, twice. (Fry them the first time, then drain them from the oil, re-heat the oil and fry them again to make them extra crispy)
In a pan, heat the oil until hot,add onions and cook until translucent.Add tomatoes and salt.Cook the tomatoes for a minute and add red chilli powder, tomato paste/puree ,cover and let it cook for 3 minutes.cook these ingredients until they are well combined and starting to thicken (you can add a splash of water if you prefer your chips saucy). Stir the sauce and taste for seasoning.
F0r extra heat you can add chopped chillies or red chilli flakes. You can adjust according to your taste and preference.
Turn the heat to low, and throw in your chips. Toss them around so that the sauce/masala covers them properly. Turn off the heat and garnish with cilantro.
