Ingredients
white rice
Vegetable oil
smoked sausage
red bell pepper – sliced
yellow bell pepper – sliced
onion – diced
cloves garlic – minced
salt
ground black pepper
tomato paste
chicken broth or water
Smoked paprika
cayenne pepper
Spring onion – chopped
Method
Place a large sufuria over medium-high. Add the oil then fry the sausages. Cook until browned on both sides, about 5 minutes. Remove from the pan and set aside.
On the same sufuria, add the peppers and onion, and sauté for 4-5 minutes. Then add the garlic, salt, and pepper. Cook until fragrant, about 1 minute. Remove from the pan and set aside with the sausage.
Add the tomato paste and about ¾ cup of chicken broth or water, and whisk to combine. Allow the mixture to simmer for 1 minute, then add the paprika and cayenne.
Stir in the leftover rice, sausage, pepper, and onions until combined.
Garnish with chopped spring onions, serve immediately with a cold beverage.
