How To Make Potato Wedges By Deep Frying Method
Peel the potatoes one by one and clean them thoroughly.
Cut the potatoes into six equal parts and set aside.
Boil the potatoes until half done.They should be partially cooked and not fully.This took me approximately 3 minutes and I let the water continue boiling.If your wedges are thicker prolong them for a few more minutes.
Once done,remove them immediately and drain .At this point the potatoes will have two different colors,on the top layer it will be slightly cooked than the middle layer.Don’t panic as they are not fully cooked.
Add oil in a shallow pan and heat it.when the oil is hot enough drop the wedges one by one and don’t overcrowd them.Fry in batches if necessary .
Drain them from the oil,let the oil get hot again and refry again on medium low heat until crispy.
