Potato  Wedges make a great appetizer or snack and are easy to make.This are delicious and crisp.

Potato wedges are a classic side dish  made with wedges of potatoes.

Most often they are either baked but can also be deep fried or air fried.

They are delicious on their on but also goes well with dips such as ketchup,chilli or guacamole.

When choosing the potatoes make sure you use russet ,yukon or maris piper.This are some of the best kinds to use for wedges.

Always avoid using waxy potatoes or new potatoes as they won’t work well.If you have no idea on how to choose potatoes,use the onced used to make french fries.

Parboilling the potatoes is essential as this helps them get cooked from the inside.

 

How To Make Potato  Wedges By Deep Frying  Method

Peel the potatoes one by one and clean them thoroughly.

Cut the potatoes into six equal parts and set aside.

Boil the potatoes until half done.They should be partially cooked and not fully.This took me approximately 3 minutes and I let the water continue boiling.If your wedges are thicker prolong them for a few more minutes.

Once done,remove them immediately and drain .At this point the potatoes will have two different colors,on the top layer it will be slightly cooked than the middle layer.Don’t panic as they are not fully cooked.

Add oil in a shallow pan and heat it.when the oil is hot enough drop the wedges one by one and don’t overcrowd them.Fry in batches if necessary .

Drain them from the oil,let the oil get hot again and refry again on medium low heat until crispy.
