Creamy Coconut Cajun Chicken Ingredients
With how good this coconut cajun chicken is, it’s hard to believe that you don’t need many ingredients. And if you’re dairy-free, there are a few options listed below!
- Chicken: I’m using boneless, skinless chicken breasts. But for a more succulent option, feel free to use chicken thighs as well.
- Cajun Seasoning: Yes, you can always find a store-bought version. But it’s honestly so easy to make your own with my recipe linked above (or below in the recipe card).
- Coconut Milk: I like to use coconut milk to maximize the creaminess in this dish.
- Cheese: Freshly grated parmesan adds a thick and creamy element to the sauce. (optional)
- Garlic,onion,salt and diced bell peppers.
Method
- Rub the chicken with cajun seasoning,salt and pepper.
- Heat oil in a pan and sear the chicken on both sides until golden brown and remove from the pan and set aside.
- In the same pan add the onions,garlic,peppers and cook for 2 minutes.Add the coconut milk and adjust the seasonings.
- Add the chicken back and let it reduce and thicken.if not thicken to your liking add cornstarch slurry.(slurry is a mixture of water and cornstarch)
